Cadus barrels benefit from high quality rough staves selected by our “merrandier” partner, Canadell, based in Trie sur Baïse. It has been a merrandier since 1950 and the main buyer for the Office National des Forêts. Thanks to this shareholding, Tonnellerie Cadus benefits from a consistent supply of high-quality French oak.This consistent supply from the most beautiful oak groves in France guarantees constant quality in our raw materials for the production of Cadus barrels. SORTING AND OPEN-AIR SEASONING

1st stage, the rough staves are sorted as soon as they are received and classified according to their origin and date of placing in the seasoning park. Optimal open-air seasoning takes place at Tonnellerie Cadus in the heart of Burgundy. The stabilization of the rough staves is done in the natural air by slow oxidation of the oak tannins in our seasoning park for 30 to 36 months.

PREPARING THE STAVES

2nd stage, that of the transformation of the stave, wood in the raw state which has spent 30 to 36 months to mature in the park in Burgundy of the Tonnellerie Cadus to the stave. The machining of French oak staves is a stage where the material takes shape. Just like the winemaking process, here the touch, the quality and the attention paid to the precision in the gestures will be decisive.

 

BUILDING THE BARRELS

Step 3: The assembly of the staves is done by hand. The precision and dexterity of the cooper’s gestures require years of work. At Tonnellerie Cadus, the firings are controlled by laser probe to obtain regular temperatures and firing times. The technique is at the service of observation, as for the winemaker’s profession.

BARREL SHAPING

4th step: once the staves have been toasted, the barrel can be assembled. Many stages follow one another in the workshop: bung hole, sanding, installation of bases, installation of metal circles … Each cooper works on a precise stage according to the specifications validated with the winegrower.

QUALITY CONTROL AND FINISHING

Last step before shipping the barrels to the wineries. Like a work of art, each barrel is the subject of specific attention to guarantee its quality and aesthetics before preparation for shipment to wineries in more than 30 countries.
